  • 1 lemon
  • 1/4 cup fresh parsley
  • 2 tablespoon fresh dill
  • 3 tablespoon olive oil
  • 3 clove garlic
  • salt — to taste
  • black pepper — to taste
  • 2 red bell pepper
  • 2 zucchini
  • 2 carrot
  • 1 red onion
  • 1 cup cherry tomatoes
  • 12 baby potatoes

Instructions

    Preheat your oven to 400°F (200°C).

    In a small bowl, mix the juice of 1 lemon, 2 tablespoons of olive oil, minced garlic, chopped parsley, dill, salt, and pepper.

    Place the salmon fillets on a baking sheet lined with parchment paper and brush them with the lemon herb mixture.

    Cut the red bell peppers, zucchini, carrot, and red onion into bite-sized pieces and place them on another baking sheet.
