Ingredients

For 4 servings

  • 600 g tilapia fillets
  • 3 tbsp olive oil
  • 1 lemon
  • 2 clove garlic
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • salt — to taste
  • black pepper — to taste
  • 8 whole wheat tortillas
  • 1 red onion
  • 1 cucumber
  • 2 tomato
  • 100 g feta cheese
  • 10 g fresh parsley
  • 200 g plain Greek yogurt

Instructions

  1. 1

Preheat the oven to 200°C (390°F).

  2. 2

In a small bowl, mix 2 tbsp of olive oil, juice of the lemon, minced garlic, smoked paprika, cumin, salt, and black pepper.

  3. 3

Place the tilapia fillets on a baking sheet lined with parchment paper. Brush the fillets with the olive oil mixture.

  4. 4

Bake the fish in the preheated oven for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.

  5. 5

While the fish is baking, slice the red onion, cucumber, and tomatoes into thin pieces.

  6. 6

In a small bowl, crumble the feta cheese and chop the fresh parsley.

  7. 7

In another bowl, mix the Greek yogurt with a pinch of salt and lemon juice to create a creamy sauce.

  8. 8

Once the fish is cooked, remove from the oven and let it cool slightly before flaking it into bite-sized pieces.

  9. 9

Warm the whole wheat tortillas in a dry skillet over medium heat for about 1 minute on each side.

  10. 10

Assemble the tacos by placing the flaked fish, sliced vegetables, crumbled feta, and chopped parsley onto each tortilla.

  11. 11

Drizzle with the yogurt sauce and serve immediately.
