Ingredients

For 4 servings

  • 600 g chicken breast
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 800 g canned white beans
  • 1 onion
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley
  • salt — to taste
  • black pepper — to taste
  • 120 ml chicken broth

Instructions

    Dice the chicken breast into bite-sized pieces and season with salt and black pepper.

    Heat 1 tbsp of olive oil in a large skillet over medium-high heat.

    Add the chicken pieces to the skillet and cook for 6-8 minutes until fully cooked through and golden brown, stirring occasionally. Remove from pan and set aside.

    In the same skillet, add the remaining 1 tbsp of olive oil.

    Chop the onion and mince the garlic, then add them to the skillet, sautéing for 2-3 minutes until the onion becomes translucent.
