- 600 g cod fillets
- 180 g quinoa
- 1 red bell pepper
- 1 cucumber
- 1 avocado
- 1 lime
- 2 tbsp olive oil
- salt — to taste
- black pepper — to taste
- 1 tsp cumin powder
- 360 ml water

Rinse the quinoa under cold water. In a pot, combine quinoa with 360 ml water and a pinch of salt. Bring to a boil, reduce the heat to low, cover, and simmer for 15 minutes until fluffy.

While quinoa cooks, season cod fillets with salt, black pepper, and cumin powder.

Heat 1 tbsp olive oil in a pan over medium heat. Cook cod fillets for 3-4 minutes on each side until opaque and cooked through. Remove from heat and let rest.
