Ingredients

- 2 cups frozen shelled edamame
- 1 cup quinoa
- 2 cups water
- 1 cucumber
- 1 red bell pepper
- 0.5 red onion
- 1 lemon
- 2 tablespoons olive oil
- salt — to taste
- black pepper — to taste
- 0.5 cup fresh parsley

Cook quinoa: Rinse 1 cup of quinoa under cold water, then combine with 2 cups of water in a pot. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and let cool.

While quinoa cooks, in another pot, bring water to a boil and add 2 cups of frozen edamame. Cook for 5 minutes until tender, then drain and let cool.
