  • 4 bell pepper
  • 2 tablespoon olive oil
  • 1 yellow onion
  • 1 carrot
  • 2 celery stalk
  • 2 clove garlic
  • 2 cup cooked lentils
  • 14.5 ounce canned diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • salt — to taste
  • black pepper — to taste
  • 2 tablespoon parsley

Instructions

    Preheat the oven to 375°F (190°C).

    Cut the tops off of each bell pepper and remove the seeds and membranes. Place them upright in a baking dish.

    In a large skillet, heat olive oil over medium heat.

    Dice the onion, carrot, and celery stalks finely and mince the garlic cloves.

    Add the onion, carrot, and celery to the skillet and cook for about 5 minutes until softened.
