Ingredients

  • 1 cup dried kidney beans
  • 1 cup white rice
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 2 carrot
  • 1 cup frozen mixed vegetables
  • 1 15-ounce can canned diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 2 cups water
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse and soak the dried kidney beans in water overnight or for at least 8 hours.

    Drain and rinse the soaked beans, then cook in boiling water for 45 minutes until tender. Drain and set aside.

    Heat olive oil in a large skillet over medium heat.
