  • 3 tablespoon olive oil
  • 2 teaspoon salt
  • 1 teaspoon black pepper
  • 3 carrot
  • 2 red bell pepper
  • 1 onion
  • 4 clove garlic
  • 1.5 cup brown lentils
  • 4 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

    Preheat the oven to 400°F (200°C).

    Rub the pork loin with 1 tablespoon olive oil, 1 teaspoon salt, and 0.5 teaspoon black pepper.

    Place pork loin in a roasting pan and roast for 25 minutes per pound, or until internal temperature reaches 145°F (63°C).
