Ingredients

- 600 g chicken breast
- 1 cup quinoa
- 2 stalks celery
- 1 cup greek yogurt
- 1 tbsp ranch dressing mix
- 1/2 cup buffalo sauce
- 1 tbsp olive oil
- salt — to taste
- black pepper — to taste
- 2 cups water

Rinse the quinoa under cold water.

In a medium saucepan, combine quinoa and 2 cups of water, add a pinch of salt, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork when done.

Season chicken breasts with salt and black pepper.

In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side or until fully cooked at an internal temperature of 75°C (165°F).
