Ingredients

  • 2 tablespoons olive oil
  • 1 onion
  • 3 clove garlic cloves
  • 2 carrot
  • 2 celery stalk
  • 2 cups canned tomatoes
  • 3 cups vegetable broth
  • 1.5 cups dried lentils
  • 1 cup frozen peas
  • 1 cup frozen spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • salt — to taste
  • black pepper — to taste
  • 0.5 cup bread crumbs
  • 0.5 cup parmesan cheese

Instructions

    Preheat your oven to 375°F (190°C).

    Finely chop the onion, garlic, carrot, and celery.

    In a large skillet, heat the olive oil over medium heat.

    Add the onion and garlic, and sauté until the onion is translucent.

    Add the carrot and celery, cooking for another 5 minutes until they soften.

    Stir in the canned tomatoes, vegetable broth, dried lentils, dried thyme, dried oregano, salt, and black pepper.

    Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes, stirring occasionally.
