- 1 cup canned black beans
- 1 bell pepper
- 1 red onion
- 2 tablespoon taco seasoning
- 8 corn tortillas
- 1 avocado
- 1 lime
- 1/4 cup cilantro

Rinse the brown lentils under cold water. In a pot, combine the lentils with 2 cups of water and bring to a boil. Reduce heat, cover, and simmer for 20-25 minutes until tender. Drain any excess water.

While the lentils cook, dice the bell pepper and red onion. In a skillet over medium heat, add 1 tablespoon of olive oil and sauté the vegetables until soft, about 5-6 minutes.
