- 2 cups green lentils
- 3 cups frozen mixed vegetables
- 1 tablespoon olive oil
- 2 cloves garlic
- 3 tablespoons soy sauce
- 1 teaspoon chili powder
- 2 scallions
- 4 cups water
- salt — to taste
- black pepper — to taste

Rinse and drain the lentils. Bring 4 cups of water to a boil in a pot. Add lentils and cook for about 15 minutes or until tender, then drain.
