- 2 chicken breast
- 1 lemon
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 2 cloves garlic
- 1 cup quinoa
- 2 cups water
- 1 cucumber
- 1 red bell pepper
- 0.5 red onion
- 1 cup cherry tomatoes
- 0.25 cup feta cheese
- 0.5 cup fresh parsley
- salt — to taste
- black pepper — to taste

Juice the lemon and mince the garlic.

In a bowl, combine 1 tablespoon olive oil, lemon juice, oregano, minced garlic, salt, and black pepper. Add chicken breasts and marinate for at least 15 minutes.

Rinse quinoa under cold water. In a pot, bring water to boil, add quinoa, cover, and cook on low heat for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
