  • 2 rack of lamb
  • 100 g butter
  • 50 g Parmesan cheese
  • 2 egg yolk
  • 2 clove garlic
  • salt — to taste
  • black pepper — to taste
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme

Instructions

    Preheat the oven to 400°F (200°C).

    Pat the racks of lamb dry with paper towels and season generously with salt and black pepper.

    In a small bowl, mix together the softened butter, grated Parmesan cheese, egg yolks, minced garlic, dried rosemary, and dried thyme to form a paste.

    Evenly spread the herb-butter mixture over the racks of lamb, pressing it into the meat.
