Ingredients

- 4 bell pepper
- 400 g tempeh
- 1 cup quinoa
- 1 tbsp olive oil
- 1 onion
- 2 clove garlic
- 2 tbsp tomato paste
- 1 tsp cumin
- 1 tsp paprika
- salt — to taste
- black pepper — to taste
- 2 cups water
- 2 tbsp parsley
Instructions

Preheat the oven to 375°F (190°C).

Cut the tops off the bell peppers and remove the seeds.

Place the peppers in a baking dish and bake for 10 minutes to soften.

While the peppers are baking, dice the onion and mince the garlic.

In a skillet, heat olive oil over medium heat and sauté the onion for 2-3 minutes until translucent.
