  • 4 bell pepper
  • 1 cup quinoa
  • 2 cups water
  • 2 cups Greek yogurt
  • 2 cups spinach
  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 2 tablespoons lemon juice
  • salt — to taste
  • black pepper — to taste
