Ingredients
For 4 servings
- 4 chicken breast
- 2 tablespoon olive oil
- 2 clove garlic
- 4 cup baby spinach
- 1/2 cup cream cheese
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- 1
Preheat the oven to 375°F (190°C).
- 2
Slice each chicken breast horizontally to create a pocket, ensuring not to cut all the way through.
- 3
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add minced garlic and sauté for 1 minute.
- 4
Add baby spinach to the skillet and cook until wilted, about 2 minutes.
- 5
Remove spinach from heat and mix in cream cheese and shredded mozzarella until well combined.
- 6
Season the inside of each chicken breast with salt and black pepper.
- 7
Stuff each chicken breast with the spinach and cheese mixture, securing the edges with toothpicks if necessary.
- 8
Heat the remaining olive oil in the skillet over medium-high heat. Sear the chicken breasts on both sides until golden brown, about 2 minutes per side.
- 9
Transfer the chicken breasts to a baking dish and bake in the preheated oven for 10-12 minutes, or until the chicken is cooked through.
- 10
Remove from oven, let rest for 5 minutes, then serve.
