  • 2 cups chickpeas
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 2 cloves garlic
  • 1 tablespoon ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 2 tablespoons olive oil
  • 2 green onions
  • 1 tablespoon sesame seeds
  • salt — to taste
  • black pepper — to taste

Instructions

    Drain and rinse the chickpeas and set aside.

    Dice the red and green bell peppers, and chop the onion.

    Mince the garlic and ginger.

    Heat olive oil in a large pan over medium-high heat.

    Add the onion, garlic, and ginger to the pan, sauté for 2 minutes until fragrant.
