Ingredients

For 4 servings

  • 4 potato
  • 1 can canned lentils
  • 1 onion
  • 2 clove garlic
  • 1 can canned tomatoes
  • 2 tablespoon vegetable oil
  • 2 teaspoon curry powder
  • salt — to taste
  • black pepper — to taste
  • 1 cup water

Instructions

  1. 1

Peel and dice the potatoes into small cubes for quick cooking.

  2. 2

Chop the onion and mince the garlic cloves.

  3. 3

Heat the vegetable oil in a large pot over medium heat.

  4. 4

Add the chopped onion and minced garlic to the pot, sauté until the onion is translucent, about 3-4 minutes.

  5. 5

Stir in the curry powder and cook for 1 minute until fragrant.

  6. 6

Add the diced potatoes, canned tomatoes with their juice, and water to the pot. Stir to combine.

  7. 7

Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes until the potatoes are just tender.

  8. 8

Drain and rinse the canned lentils, then add them to the pot. Stir well and season with salt and black pepper to taste.

  9. 9

Simmer for an additional 5 minutes, allowing flavors to meld together and potatoes to fully cook.

  10. 10

Serve hot, garnished with an optional sprinkle of chopped fresh herbs if available.
