Ingredients

- 400 grams firm tofu
- 1 red bell pepper
- 1 green bell pepper
- 1 carrot
- 1 onion
- 2 cloves garlic
- 200 grams pineapple chunks
- 4 tablespoons soy sauce
- 3 tablespoons rice vinegar
- 3 tablespoons ketchup
- 2 tablespoons brown sugar
- 2 tablespoons cornstarch
- 3 tablespoons water
- 2 tablespoons vegetable oil
- 4 cups cooked white rice

Press the firm tofu to remove excess moisture, then cut into cubes.

Chop the red bell pepper, green bell pepper, carrot, and onion into bite-sized pieces.

Mince the garlic cloves.

Heat vegetable oil in a large pan over medium-high heat. Add the tofu and cook until golden brown on all sides, about 5 minutes. Remove the tofu and set aside.

In the same pan, add the onion, garlic, and carrot. Stir-fry for 2 minutes, then add the bell peppers and pineapple chunks. Continue to stir-fry for another 3 minutes.

In a small bowl, mix soy sauce, rice vinegar, ketchup, brown sugar, cornstarch, and water to create the sweet and sour sauce.

Pour the sauce into the pan with the vegetables and bring to a simmer, stirring until the sauce thickens.

Return the tofu to the pan, tossing to coat with the sauce. Cook for an additional 2 minutes.
