  • 2 sweet potato
  • 1 can canned white beans
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • salt — to taste
  • black pepper — to taste
  • 1 teaspoon ground cumin
  • 2 cups baby spinach

Instructions

    Peel and dice the sweet potatoes.

    Chop the onion and mince the garlic.

    Heat olive oil in a large pot over medium heat. Add the onion and garlic, sauté until onion is translucent, about 3 minutes.
