- 2 sweet potato
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1 can black beans
- 2 cloves garlic
- 1 lime
- 8 corn tortillas
- 1 red onion
- 0.5 bunch fresh cilantro
- 1 avocado
- 1 cup cherry tomatoes

Preheat the oven to 400°F (200°C).

Peel and dice the sweet potatoes into small cubes.

Toss the sweet potato cubes with 1 tablespoon of olive oil, ground cumin, smoked paprika, and half of the salt. Spread them out on a baking sheet.

Roast the sweet potatoes in the oven for 25 minutes, stirring halfway through, until they are tender and slightly crisp on the edges.
