- 2 tablespoons olive oil
- 1 onion
- 1 red bell pepper
- 1 zucchini
- 1 tomato
- 2 cloves garlic
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 2 tablespoons soy sauce
- 2 tablespoons fresh parsley
