  • 2 tablespoons olive oil
  • 1 onion
  • 1 red bell pepper
  • 1 zucchini
  • 1 tomato
  • 2 cloves garlic
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 2 tablespoons soy sauce
  • 2 tablespoons fresh parsley

    While the TVP is rehydrating, dice the onion, red bell pepper, zucchini, and tomato, and mince the garlic.
