  • 2 whole (15 oz cans) canned white beans
  • 1 cup frozen peas
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • salt — to taste
  • black pepper — to taste
  • 1 cup panko breadcrumbs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons parsley

    Preheat oven to 375°F (190°C).

    Drain and rinse the canned white beans, then set aside.

    In a large skillet, heat olive oil over medium heat. Dice the onion and mince the garlic, then add them to the skillet. Sauté until fragrant and soft, about 3 minutes.
