Ingredients

- 400 gram wide rice noodles
- 300 gram pork loin
- 2 egg
- 200 gram Chinese broccoli
- 3 tablespoon dark soy sauce
- 2 tablespoon light soy sauce
- 2 tablespoon oyster sauce
- 1 tablespoon sugar
- 3 tablespoon vegetable oil
- 3 clove garlic

Soak the wide rice noodles in hot water for 10 minutes or until softened. Drain and set aside.

Thinly slice the pork loin against the grain and set aside.

Chop the Chinese broccoli into bite-sized pieces, separating the leaves from the stalks.

Mince the garlic cloves.

In a large pan or wok over medium-high heat, add 2 tablespoons of vegetable oil. Add garlic and sauté until fragrant.

Add the sliced pork and stir-fry until cooked through, about 3-4 minutes. Remove the pork from the pan and set aside.

In the same pan, add the remaining tablespoon of oil. Crack the eggs into the pan and scramble them.

Add the soaked noodles to the pan, followed by dark soy sauce, light soy sauce, oyster sauce, and sugar. Stir well to combine.

Add the pork back to the pan along with the Chinese broccoli. Stir-fry until the broccoli is tender and the noodles are evenly coated.
