Ingredients
For 4 servings
- 500 g ground turkey
- 2 sweet potato
- 400 g black beans
- 1 onion
- 1 red bell pepper
- 3 clove garlic
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- salt — to taste
- black pepper — to taste
- 1 lime
- fresh cilantro — to taste
Instructions
- 1
Peel and dice the sweet potatoes into small cubes. Finely chop the onion and red bell pepper. Mince the garlic cloves.
- 2
In a large skillet, heat olive oil over medium heat. Add the onion and garlic, sautéing until soft and fragrant, about 3 minutes.
- 3
Add the ground turkey to the skillet, cooking until browned and no longer pink, breaking it apart with a spatula, about 5 minutes.
- 4
Stir in the diced sweet potatoes and red bell pepper. Cover and cook until the sweet potatoes are tender, about 10 minutes, stirring occasionally.
- 5
Add the black beans (drained and rinsed), cumin, chili powder, salt, and black pepper to taste. Mix well and cook for an additional 5 minutes, until the flavors meld together.
- 6
Squeeze fresh lime juice over the skillet, then garnish with freshly chopped cilantro. Serve warm.
