Ingredients

- 3 sweet potato
- 400 g extra-firm tofu
- 1 red bell pepper
- 1 green bell pepper
- 3 tbsp soy sauce
- 2 tbsp olive oil
- 2 clove garlic
- 1 tbsp ginger
- 2 spring onion
- 1 tbsp sesame seeds
- 1 tbsp cornstarch
- 1/4 cup water
- black pepper — to taste
Instructions

Peel and dice the sweet potatoes into small cubes.

Cut the tofu into cubes and pat dry with paper towels.

Deseed and slice the red and green bell peppers into strips.

Mince the garlic and grate the ginger.

In a small bowl, mix the soy sauce, cornstarch, and water to create a slurry.

Heat 1 tablespoon of olive oil in a large pan or wok over medium heat.

Add the tofu cubes and cook until golden brown on all sides, about 8-10 minutes. Remove from pan and set aside.

In the same pan, add the remaining olive oil. Add minced garlic and ginger, sautéing for 1-2 minutes until fragrant.

Add the sweet potato cubes to the pan and stir-fry for 10-12 minutes until slightly soft.
