Ingredients

For 4 servings

  • 2 chicken breast
  • 8 flour tortilla
  • 2 cups cheddar cheese
  • 2 tablespoons olive oil
  • 1 onion
  • 1 red bell pepper
  • 2 tablespoons taco seasoning
  • salt — to taste
  • black pepper — to taste
  • 1 cup salsa

Instructions

    Slice the chicken breast into thin strips.

    Chop the onion and red bell pepper.

    Heat 1 tablespoon of olive oil in a large skillet over medium heat.

    Add the onion and red bell pepper, cooking until softened, about 3 minutes.

    Add the chicken strips to the skillet along with taco seasoning, salt, and black pepper. Cook until the chicken is fully cooked, about 5-7 minutes.

    Remove the chicken mixture from the skillet and set aside.

    Wipe the skillet clean and reduce heat to medium-low. Add half a tablespoon of olive oil.

    Place one tortilla in the skillet, sprinkle with 1/4 cup of cheddar cheese, followed by 1/4 of the chicken mixture.

    Top with another 1/4 cup of cheese and a second tortilla.

    Cook until the bottom tortilla is golden brown and the cheese begins to melt, about 2-3 minutes. Carefully flip and cook the other side until golden.
