- 2 cups water
- 1 15 oz can canned chickpeas
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/4 cup parsley
- salt — to taste
- black pepper — to taste

Rinse the quinoa under cold water to remove any bitterness.
