- 1 cup green lentils
- 2 potato
- 1 onion
- 2 clove garlic
- 1 can canned diced tomatoes
- 2 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- salt — to taste
- black pepper — to taste
- 2 cups water
- parsley — to taste

Rinse the green lentils under cold water and set aside.

Dice the potatoes into small cubes. Finely chop the onion and garlic.

Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté until the onion is translucent, about 3 minutes.

Add the diced potatoes to the skillet and cook for another 3 minutes.

Stir in the rinsed lentils, canned diced tomatoes (with juice), ground cumin, and ground coriander. Season with salt and black pepper to taste.

Add water and bring to a boil. Reduce the heat to low, cover, and simmer for about 15 minutes until the lentils and potatoes are tender.
