Ingredients

For 4 servings

  • 6 eggs
  • 1/4 cup milk
  • 1/2 cup cheddar cheese
  • 1 cup frozen mixed vegetables
  • 2 green onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • cooking spray — to taste

Instructions

  1. 1

Preheat the oven to 350°F (175°C).

  2. 2

Lightly spray a muffin tin with cooking spray to prevent sticking.

  3. 3

Thaw the frozen mixed vegetables and finely chop the green onions.

  4. 4

In a large bowl, whisk together the eggs and milk until fully combined.

  5. 5

Add the cheddar cheese, mixed vegetables, chopped green onions, salt, and black pepper to the egg mixture and stir well.

  6. 6

Pour the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.

  7. 7

Bake in the preheated oven for 15 minutes or until the egg bites are set and lightly golden on top.

  8. 8

Allow to cool slightly before removing from the muffin tin. Serve warm or at room temperature.
