Ingredients

  • 2 sweet potato
  • 1 cup brown lentils
  • 4 cups vegetable broth
  • 1 onion
  • 2 carrot
  • 2 celery stalk
  • 3 cloves garlic
  • 1 cup canned diced tomatoes
  • 2 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 bay leaf
  • salt — to taste
  • black pepper — to taste
  • 2 cups fresh spinach
  • 1 tablespoon lemon juice

    Peel and dice the sweet potatoes into 1-inch cubes.

    Rinse the lentils under cold water and set aside.

    Dice the onion, carrots, and celery. Mince the garlic.

    In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery, and sauté for 5 minutes until softened.
