Ingredients

- 1 cup dried black beans
- 4 tortillas
- 1 onion
- 1 green bell pepper
- 1 cup canned corn
- 1 cup cheddar cheese
- 2 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- salt — to taste
- black pepper — to taste
- 3 cup water

Rinse the dried black beans under cold water and soak them overnight or for at least 8 hours.

Drain and rinse the soaked black beans, then place them in a pot with 3 cups of water. Bring to a boil, then reduce heat and simmer for 45-60 minutes until tender. Drain and set aside.

While the beans are cooking, dice the onion and green bell pepper.

In a large skillet, heat 1 tablespoon of olive oil over medium heat.
