Ingredients

For 4 servings

  • 1.5 cups textured vegetable protein (TVP)
  • 6 cups vegetable broth
  • 2 cups canned black beans
  • 3 cups frozen mixed vegetables
  • 3 tablespoons tomato paste
  • 2 teaspoons onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Rehydrate the textured vegetable protein by combining it with 2 cups of vegetable broth in a bowl and letting it sit for 5 minutes, then drain any excess liquid.

  2. 2

In a large pot, combine the rehydrated textured vegetable protein, remaining vegetable broth, canned black beans (rinsed and drained), frozen mixed vegetables, and tomato paste.

  3. 3

Stir in onion powder, garlic powder, dried oregano, dried thyme, salt, and black pepper.

  4. 4

Bring the mixture to a boil over medium-high heat, then reduce to a simmer.

  5. 5

Cook for 10 minutes, stirring occasionally, until the vegetables are heated through and the stew has thickened slightly.

  6. 6

Adjust seasoning with additional salt and pepper if needed before serving.
