Ingredients

For 4 servings

  • 2 can canned tuna
  • 1 can canned chickpeas
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/2 onion
  • 1 clove garlic
  • 2 tablespoon parsley
  • 1 tablespoon lemon juice
  • 2 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Drain the canned tuna and chickpeas; rinse the chickpeas under cold water.

  2. 2

In a large bowl, mash the chickpeas with a fork or potato masher until mostly smooth.

  3. 3

Finely chop the onion and parsley, and mince the garlic.

  4. 4

Add the tuna, egg, breadcrumbs, onion, garlic, parsley, lemon juice, salt, and pepper to the mashed chickpeas. Mix well until combined.

  5. 5

Form the mixture into 8 patties, about 1/2 inch thick.

  6. 6

Heat olive oil in a large non-stick pan over medium heat.

  7. 7

Once the oil is hot, add the patties to the pan. Cook for 3-4 minutes on each side until golden and crispy.
