Ingredients
For 4 servings
- 500 g lean ground beef
- 200 g brown rice
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 2 cloves garlic
- 400 g canned black beans
- 400 g canned diced tomatoes
- 1 tbsp chili powder
- 1 tsp cumin
- 2 tbsp olive oil
- to taste salt
- to taste black pepper
- to taste fresh cilantro
Instructions
- 1
Cook the brown rice according to package instructions.
- 2
While the rice cooks, dice the onion and bell peppers, and mince the garlic.
- 3
Heat olive oil in a large skillet over medium-high heat.
- 4
Add the ground beef to the skillet, season with salt and black pepper, and cook until browned, breaking up the meat with a spatula, about 5 minutes. Drain excess fat if necessary.
- 5
Add onion, bell peppers, and garlic to the skillet with the beef. Sauté until the vegetables are softened, about 4 minutes.
- 6
Stir in the chili powder and cumin, cooking for an additional 1 minute until fragrant.
- 7
Add the canned tomatoes (with juice) and drained black beans to the skillet. Stir to combine and bring to a simmer.
- 8
Once the rice is cooked, add it to the skillet and mix well. Adjust seasoning with salt and pepper to taste.
- 9
Garnish with fresh cilantro before serving.
