  • 500 g lean ground beef
  • 200 g brown rice
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 2 cloves garlic
  • 400 g canned black beans
  • 400 g canned diced tomatoes
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • to taste salt
  • to taste black pepper
  • to taste fresh cilantro

Instructions

    Cook the brown rice according to package instructions.

    While the rice cooks, dice the onion and bell peppers, and mince the garlic.

    Heat olive oil in a large skillet over medium-high heat.

    Add the ground beef to the skillet, season with salt and black pepper, and cook until browned, breaking up the meat with a spatula, about 5 minutes. Drain excess fat if necessary.

    Add onion, bell peppers, and garlic to the skillet with the beef. Sauté until the vegetables are softened, about 4 minutes.

    Stir in the chili powder and cumin, cooking for an additional 1 minute until fragrant.
