- 2 tbsp olive oil
- 1 onion
- 3 clove garlic
- 1 tbsp ginger
- 2 tbsp curry powder
- 400 g canned tomatoes
- 200 g spinach
- salt — to taste
- black pepper — to taste
- 300 g brown rice
- 600 ml water

Cook the brown rice by bringing 600 ml of water to a boil, adding rice, reducing to a simmer, and cooking covered for 15 minutes or until water is absorbed.
