Ingredients

- 3 cups black beans
- 1.5 cups canned diced tomatoes
- 1 cup frozen corn
- 1 red bell pepper
- 1 green bell pepper
- 1 onion
- 2 cloves garlic
- 1 jalapeño
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- salt — to taste
- black pepper — to taste
- 1/4 cup nutritional yeast
- 1/4 cup fresh cilantro
Instructions

Preheat the oven to 375°F (190°C).

Dice the red and green bell peppers, onion, and jalapeño. Mince the garlic.

In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and jalapeño, and cook for 2-3 minutes until softened.
