Ingredients

  • 3 cups black beans
  • 1.5 cups canned diced tomatoes
  • 1 cup frozen corn
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 2 cloves garlic
  • 1 jalapeño
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • salt — to taste
  • black pepper — to taste
  • 1/4 cup nutritional yeast
  • 1/4 cup fresh cilantro

Instructions

    Preheat the oven to 375°F (190°C).

    Dice the red and green bell peppers, onion, and jalapeño. Mince the garlic.

    In a large skillet, heat olive oil over medium heat. Add the onion, garlic, and jalapeño, and cook for 2-3 minutes until softened.

    Add the diced bell peppers and continue to cook for about 3 minutes.

    Stir in the black beans, canned diced tomatoes, frozen corn, ground cumin, smoked paprika, salt, and black pepper. Mix well and cook for another 5 minutes.
